Eight wines, eight colors, eight food pairings, two evenings.
For Rosso Rubino 2021, Paltrinieri Sorbara dedicates a unique event
to the colors of our land and our wines, paired with eight different tastings.
On Thursday, July 1st and Friday, July 2nd, you can taste our wines and dine in the winery with
a reserved table: each wine will be served by ONAV staff and paired with
flavors selected by Da Paolo Banqueting.
More than a party, more than a dinner, more than a tasting.
Discover Paltrinieri wines and their incredible colors; we will serve you a glass of wine
along with the paired dish.
You can customize your experience as you prefer, starting with the wine you want
to taste first and moving freely.
The evenings will begin at 7:00 PM with a tour of the winery, and the
tasting experiences will start at 8:00 PM.
The proposed pairings will be as follows:

Fassona tartare accompanied by shallot mayonnaise, artichokes, and Taggiasca olives
LARISERVA Brut Sorbara Sparkling Wine in purity
Amberjack tortello with confit Pachino datterino tomatoes
LECLISSE Sorbara in purity CRU
Cod spheres with cuttlefish ink mayonnaise quenelle
SANT’AGATA Sorbara in purity
Crespelle alla Vignolese (Vignola-style crêpes)
PIRIA Classic Sorbara
Modenese crescentine with Favola Gran Riserva Mortadella Palmieri
RADICE Sorbara in purity refermented in bottle
Fish crudités, rice, and tuna tartare
BIANCO dell’Emilia
Crostini with Cantabrian Sea anchovies and lemon zest
SOLCO Salamino in purity
Ricotta and chocolate dessert
During the evening, a performance by musician and producer
Giovanni Leo Leonardi: a project created especially for the occasion, with special arrangements created ad-hoc using sounds and noises from the Paltrinieri winery and wines.

Booking is mandatory for both evenings: only 100 places are available per evening. The evening is considered booked upon purchase of a place.
